To make tasty fall cookies...
Peel, quarter and grate 1/2 apple. (I used the large side of a cheese grater). Squeeze out extra juice and set aside.
Beat until light and fluffy:
1/2 cup butter
1/2 cup peanut butter (I used the hippy natural kind)
1/2 cup sugar
1/2 cup packed brown sugar
Add in and blend completely:
1 egg
1/2 teaspoon vanilla extract
Mix in:
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
I rolled the dough into cookies and then stuck them in the fridge for a bit, but I don't think that was necessary; I was just busy. At any rate, bake them at 375 for 10-12 minutes.
