Spiced Rum Cookies

These are some of my favorite holiday cookies; I'm not sure why I've never posted the recipe before. It's probably because I've never actually written it down before...I just kind of have it in my head. But here it is...

Beat together until light and fluffy:

1/2 C butter (I use salted)
2/3-3/4 C brown sugar (I prefer them less sweet, but you can use the greater amount of sugar if you like sweeter cookies)

Add and beat in:

1 egg
2 tablespoons dark rum

Add:

1/4 tsp allspice
1/4 tsp cloves
1/2 tsp cinnamon
1/4 tsp nutmeg

(you can adjust the spices to taste; sometimes I add a little ginger as well.)

In a separate bowl, mix together:

1 1/2 C flour
1/4 tsp salt
1/2 tsp baking powder

Add dry ingredients to butter/sugar mixture, mix together. Roll cookie dough into balls and bake at 350 for 10-15 minutes, or until the bottom of the cookies are just starting to turn brown. Sprinkle with powdered sugar right after they get out of the oven.

  1. Sam, I'm glad you're feeling well enough for holiday baking. I invited all of my husband's relatives in the area to our house Saturday night, so there will be a lot of cookie baking going on around here.
